Easy Sweet Potato Casserole Ingredients

For step-by-step instructions, check out the printable recipe card below. But here is what you’ll need to get started.

  • SWEET POTATOES – Any brand will do. You’ll want to drain them, but don’t rinse them.
  • BROWN SUGAR – Adds just the right amount of sweetness to the dish.
  • MELTED BUTTER – Unsalted butter.
  • APPLE JUICE – This gives the dish just a slight tang that balances well with the sweet potatoes.
  • CINNAMON – Full of authentic, wholesome fall flavors and aromas!
  • MINI MARSHMALLOWS – We like using the mini marshmallows because they cook (melt and brown) at the rate we like for this dish. If all you have is larger or jumbo marshmallows, consider cutting them in half.

Can I make this Casserole with Fresh Sweet Potatoes?

Yes! Using canned sweet potatoes cuts down on the time it takes to cook this dish. Instead of opening up a can, you could peel, cube and boil your potatoes for 15 minutes. Use a large pot and add some salt to the water. Then mash them like the instructions tell you to. You will need about three pounds of sweet potatoes.

What Is The Difference Between A Sweet Potato and Yam?

No. They are not the same thing. Although some people do use the term interchangeably. We want to be using Sweet Potatoes for this dish, not yams. Sweet Potatoes are better because they are soft and wetter. Yam are harder and starchier. If you do decide to use Fresh Sweet Potatoes, you can know you have the right ones if they are tapered at the end. Yams look more like cylinders and have a rougher, whiter bark like skin. Can You Make Sweet Potato Casserole Ahead of Time?

Yes!

You can prepare the casserole ahead of time and keep in in the fridge for a couple days. Just don’t sprinkle on your Marshmallows until you are ready to cook.

If you go this route, you will need to cook the potatoes uncovered for an additional 20 minutes beforehand to warm the potatoes up before adding your marshmallow topping. This allows all of the potatoes to heat through.

Notes, Tips and FAQs

  • DO YOU NEED TO SOFTEN THE SWEET POTATOES AT ALL? – Your sweet potatoes should be soft enough out the can to mash. But, if you want to take the time, you can certainly put them in a microwave safe bowl to soften them. Heat at one minutes intervals, testing with a fork until they are soft enough for you.
  • OTHER TOPPINGS – You can add for a pecan topping by adding some crushed pecans. Crushed walnuts would work too. You add them to the marshmallow topping for a sweet and savory combo!
  • OTHER ADDITIONS – Add a couple teaspoons of nutmeg or pumpkin pie spice for an add dose of fall flavor!

Easy to make. I did forget to put the apple juice in but it was still delicious. I made it one day, put in fridge w/o marshmallows on. Next day I let it sit on the counter for an hour before I put the marshmallows on top and baked it for 30 minutes.

What if you accidentally grabbed canned Yams- sweet potatoes in syrup. Can you still use them in the recipe? I’ve made this before and it is wonderful!

FAQs

Why put egg in sweet potato casserole? ›

The egg is the all-important binder in a sweet potato casserole: it enriches and stiffens the mixture without making it heavy.

How do you make sweet potato casserole not runny? ›

Maple syrup, a dash of cinnamon, brown sugar and vanilla all make an appearance for an incredible flavor. It's hearty and satisfying. Eggs and cream help stabilize the dish and prevent it from becoming too runny (a common complaint with many sweet potato casserole recipes). Make it as smooth or chunky as you like!

How to tell when sweet potato casserole is done? ›

Sprinkle the topping evenly over the sweet potato mixture, then pop it into the oven and let it bake for 40 to 45 minutes. You will know it's done when the topping is lightly browned and the center of your casserole is set and firm.

Is it better to bake or boil sweet potatoes? ›

Why You Should Bake Sweet Potatoes Instead. While boiling makes sweet potatoes tender, it doesn't help much with their flavor. Most dishes that call for boiled sweet potatoes would be improved if you used roasted or baked sweet potatoes.

Can I leave eggs out of sweet potato casserole? ›

Eggs (or not!)

– I've made this sweet potato casserole with and without eggs, both ways are delicious. The eggs act as a binder and gives the casserole a light and fluffy texture. Without eggs, the casserole doesn't have as much structure but it still silky smooth and tastes delicious.

How do you thicken a sweet potato casserole? ›

How do you thicken a sweet potato casserole? If you are not adding eggs, you can thicken your sweet potato casserole by adding a bit of flour or cornstarch. You will need about 2-3 tablespoons of flour and 1 tablespoon of cornstarch.

Can I use canned sweet potatoes instead of fresh? ›

Canned or frozen sweet potatoes may be substituted for the fresh form in any recipe calling for cooked sweet potatoes as the starting point. Canned sweet potatoes are generally smaller in diameter because of their better canning qualities.

Why is my sweet potato casserole so watery? ›

Why is my sweet potato casserole watery? If you overcook your sweet potatoes, they may begin to absorb too much liquid, making them watery. It's important to cut your potatoes into equal-sized pieces so that they all cook at the same rate. Make sure to remove them from the steamer as soon as they are fork-tender!

How do you keep a casserole moist? ›

Pro Tip: Avoid Dry Casserole.

The best way to prevent it from drying out is to add a little bit of water, around ¼ cup, to the top of it. Allow the water to seep between the food and the sides of the baking dish. Cover with aluminum foil to seal in the moisture.

Do you have to cover sweet potatoes when baking? ›

Recipe Tips

How many days can you eat sweet potato casserole? ›

To Store: Store sweet potato casserole covered in the refrigerator for 4-5 days. To Freeze: Prepare the sweet potato casserole completely, but don't bake it. Cover with a double layer of aluminum foil and freeze for up to 3 months.

Do you peel sweet potatoes before boiling for casserole? ›

There is not much difference between boiling sweet potatoes with the skins on versus peeling them, but you will get a boost of fiber and potassium if you keep the skin on. The skin also adds a subtle texture to each bite. If you're looking for a smoother mash, peel the potatoes first before boiling.

Do sweet potatoes get sweeter the longer you cook them? ›

The longer and slower you cook a sweet potato, the more maltose is formed and the sweeter it will taste.

What is the healthiest way to cook sweet potatoes? ›

Boiling sweet potatoes retains more beta-carotene and makes the nutrient more absorbable than other cooking methods such as baking or frying. Up to 92% of the nutrient can be retained by limiting the cook time, such as boiling in a pot with a tightly covered lid for 20 minutes.

Does egg thicken casserole? ›

The proteins in eggs coagulate or set at different temperatures. This results in thickening but it means that eggs must be cooked gently and heated carefully or they will scramble rather than thicken a sauce or other mixture.

What is the purpose of eggs in a baked goods recipe? ›

Eggs play an important role in everything from cakes and cookies to meringues and pastry cream — they create structure and stability within a batter, they help thicken and emulsify sauces and custards, they add moisture to cakes and other baked goods, and can even act as glue or glaze.

Why is my sweet potato casserole so runny? ›

If your sweet potato casserole turned out “watery”, its usually because you forgot to add eggs; you didn't let your casserole have enough time to set up after baking or you used fresh sweet potatoes and didn't boil them long enough before mashing.

What does adding an extra egg do to baked goods? ›

Eggs are responsible for giving baked goods structure, which means the amount you use directly affects the resulting texture. Using too few eggs will make your desserts dense, but using too many will make them rubbery. The explanation for this lies in the fact that eggs are made up of protein.
